Did you have a good Thanksgiving? I haven’t blogged in a week. That means I haven’t cooked anything. Whoopsie. I had some much needed days off and we did a lot of eating out.
I’m really trying to watch what I eat – I’ve been using the My Fitness Pal app for quite a few months, to no avail. This dish is not exactly healthy, but I’ve had it pinned for quite awhile and wanted to give it a try. It was really good but now I’m off to let Jillian yell at me.
2 boneless skinless chicken breasts, cut into thin strips
4 ounces linguine, cooked al dente
2 teaspoons cajun seasoning
2 tablespoons butter (I used about 1 TB EVOO)
1-2 cup heavy whipping cream (I just used 1/2 c. of milk so mine was less creamy)
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder (I used fresh minced garlic)
1 TB flour
1/4 cup grated parmesan cheese (I skipped this. Honestly, I forgot)
Place chicken and cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in EVOO until chicken is tender, about 5 to 7 minutes.
Reduce heat & add onion powder, milk, tomatoes, basil, salt, garlic, black pepper and heat through. At this point I added about 1 TB of flour to thicken it up.
Pour over hot linguine and toss with Parmesan cheese.
