Crock Pot Chicken Alfredo

Slow Cooker Chicken Alfredo

Serve this easy crockpot chicken alfredo with oven roasted garlic green beans, simple garlic knots, and then fruit pizza for dessert.

I’m going to make this short and sweet today. We’ve got quite a to-do list before baby girl makes her appearance which should be anytime in the next 18 days. Give or take. {update – she ended up arriving 4 days later!}

This slow cooker chicken alfredo recipe is so easy. It was perfect for a Sunday dinner and because it is so simple, it gave me plenty of time/energy to make garlic knots to serve with it.

It’s also been a great option since baby arrived because it takes such a little amount of time to put together.

Ingredients

Below is a list of the ingredients you’ll need to gather to make this recipe. Scroll all the way down for the full recipe card.

  • Chicken – I use boneless, skinless chicken breasts.
  • Alfredo Sauce – I use jarred to keep it really simple, but you can also make homemade alfredo sauce.
  • Dried Onion
  • Salt & Pepper
  • Sun Dried Tomatoes – If you use the kind packed in oil, drain them first.
  • Baby Spinach – Fresh baby spinach.
  • Pasta – Use fettuccine to make crockpot chicken fettuccine alfredo, but we also like to use angel hair pasta.

Things you’ll need

  • My slow cooker of choice – My husband got me this Hamilton Beach Set ‘n Forget It for Christmas and it’s so nice being able to set a time before I leave for work and having it automatically switch over to “warm” when the cooking time is up.
  • Rachael Ray Spoon & Ladle Set – I love this spoon set. It’s great for mixing up the chicken (with the spoon), then ladling it out over the pasta once it’s done.
  • Colander with a handle – So, I thought this was silly. My husband brought me a colander with a handle and I thought it was just going to take up space in the cupboard but I actually love it and use it more than any other.

Can you put frozen chicken in the slow cooker

I get this question often so I like to answer it. The best answer is no, you shouldn’t put frozen chicken in a slow cooker.

A slow cooker is just that, a slow cooker. It doesn’t bring meat up to a safe temperature quickly enough to start from frozen.

People do it often and I’m sure it’s sometimes fine, but it’s safest to only use thawed chicken in the crock pot.

Which type of alfredo sauce should I use?

I made this recipe really easy by using a jarred alfredo sauce. I like the Classico’s Roasted Garlic or Trader Joe’s versions. But, if you want to make your own, try my Olive Garden copycat homemade alfredo sauce.

Equipment

Ingredients
 

  • 1.5 pounds boneless skinless chicken breasts 3 breasts, cubed
  • salt & pepper to taste
  • 1 teaspoon dried onion
  • 15 ounces alfredo sauce (I used Classico Roasted Garlic but also love Trader Joe’s)
  • ½ cup sun dried tomatoes julienned
  • 1 cup fresh baby spinach
  • ½ pound pasta cooked (we used capellini/angel hair)

Instructions
 

  • Cube your chicken breasts then season with salt & pepper.
    1.5 pounds boneless skinless chicken breasts, salt & pepper
  • Add the chicken to the crock pot and sprinkle with the dried onion.
    1 teaspoon dried onion
  • Pour the jar of alfredo sauce over the chicken. I also added a little water (about 1/4 cup) to the jar, closed the lid, shook it, then added that to the crock pot as well.
    15 ounces alfredo sauce
  • Cover and cook on HIGH for 4 hours or LOW for about 6.
  • Once the 4 (or 6 hours) are up, add in the sun dried tomatoes.
    1/2 cup sun dried tomatoes, 1 cup fresh baby spinach
  • Tear up the baby spinach and toss that in, too.
  • Stir and let the spinach wilt and the tomatoes slightly soften.
  • Meanwhile, cook the pasta then spoon on top.
    1/2 pound pasta

    Does it matter if the sundried tomatoes are in oil or not? Which did you use? THANK YOU!

      Hi Lori 🙂 No, it doesn’t matter if they are in oil or not. I generally prefer to use the kind that aren’t in oil but if I have the oil packed ones on hand, I usually give them a quick rinse under water and pat them dry before I use them.

    Mmmm, the pictures look lovely! I like the idea of putting in spinach and sundried tomatos. It makes it look festive (in an Italian way) like a caprese salad with the Italian flag colors! I have been making mine with broccoli and I think my family might appreciate a little something new! I am currently on a weightloss attempt and might try this on cauliflower or broccoli because it looks pretty versatile.

    Will it make a huge difference if i have to cook it on low for 8 hours instead of 6?

      It might get slightly dry, but it should be fine. That’s why I love my slow cooker that switches itself to WARM after the cooking time is up. So handy when you’re out & about 🙂
