Loaded Baked Potato Dip

This recipe came across my reader this morning and I had to run to Target to get the ingredients. I think it’s a perfect last minute addition to our Super Bowl menu. I’m pretty excited about trying it – only 4 more hours!

Persnickety Plates: Loaded Baked Potato Dip #appetizer

16 oz sour cream
16 slices bacon, cooked and crumbled (I used the microwave kind)
8 oz sharp cheddar cheese, shredded (about 2 cups)

Combine all ingredients in a medium bowl, saving a little cheese & bacon to sprinkle on top, and refrigerate for at least one hour before serving so the flavors can come together. You can also add chives or scallions if you like those.

Top with extra shredded cheese and crumbled bacon.

Serve with potato chips or whatever other type of chip you like. I think dipping potato wedges in it would be amazing. Next time.

The dip will keep in the fridge for up to a week if kept in an airtight container.
