Mini Ziti with Sun Dried Tomatoes & Artichoke Hearts {& shrimp}

I can put lemon pepper on almost everything. In high school, when I worked at the retirement home, I would often make fries with lemon pepper and call it my lunch. Nutritious, right? White rice with lemon pepper is pretty perfect in my eyes. Lemon pepper on any kind of pasta is a winner for me but I felt like I needed a few more ingredients to make it more substantial. 
I’m recently in love with artichoke hearts and I picked up some “julienne sliced” sun dried tomatoes from Trader Joe’s that I wanted to use. The flavors really complimented each other well. 
I made this pasta as a lazy Sunday meal, but it would be a great, quick weeknight dish. 
Mini Ziti with Sun Dried Tomatoes & Artichoke Hearts {& shrimp}

Serves: 2-4

Ingredients
1/2 box (8 oz) of mini ziti
1/2 jar artichoke hearts, chopped
1/4 cup sun dried tomatoes
olive oil
lemon pepper seasoning (approx. 1 Tb)
red pepper flakes (to taste)
onion flakes (sprinkle)
salt (to taste)
shaved Parmesan cheese (to taste)
shrimp (if you want a protein)

Directions
Bring a medium size pot of salted water to boil, add your ziti and cook until done. I like mine slightly al dente, the Mr. likes it softer.

Once done, drain the pasta and add to a large bowl.

Give the pasta a couple turns of olive oil, just enough to lightly coat it.

Season as desired. I used lemon pepper, red pepper flakes, onion flakes and salt.

Toss in the chopped artichoke hearts and sun dried tomatoes. Top with shaved Parmesan cheese. That’s where I stopped (top picture).

The Mr. recently picked up some tail-off shrimp scampi so he cooked some up and added it to his pasta (bottom picture).

    YUM! I rarely use lemon pepper. I’ll have to try to work it into more recipes. This looks amazing! I love the shrimp 🙂

      I have searched high and low for mini ziti. I keep seeing links to Barilla but when I follow them it’s not there so I assume they discontinued it. I know I could use another shape but I don’t want to. It’s mind boggling that I can’t find it anywhere! Thanks for any help!

      I think my local stores (Kroger & Meijer) have store brand. I’ll keep my eye out next time!
