I know you’re probably thinking about all-Turkey everything right now, but stick with me. Sunday was busy. Really busy, with errands, prepping for my mother-in-law’s arrival, cookie making, etc. but I happened to throw this in the slow cooker in the morning so all day I had the comforting feeling of knowing that dinner was taken care of. I love that feeling.

I wish I had a catchy name for this dish. Basically I just took my favorite things (chicken, zucchini, spinach, pasta) and turned it into a slow cooker meal. I was going to call it Slow Cooker Chicken Parmesan, but then I realized I wasn’t using any parmesan cheese. Oh well.

I really liked it, Julia ate the entire plate (which is rare for her toddler taste buds, lately) and Bob liked it, too.

Slow Cooker Chicken & Zucchini

Cook Time: 7 hours
Total Time: 7 hours 10 minutes
Make this Chicken, Zucchini, and Spinach right in the slow cooker. Eat alone or spooned over your favorite noodles.

  • Spray the bottom of a 6 quart slow cooker with non-stick spray.
  • Cut the chicken into small pieces and season with salt & pepper. Add it to the slow cooker.
  • Pour in the pasta sauce, chopped zucchini, diced onion, and minced garlic. Stir to combine.
  • Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • One half hour before the cook time is up, stir in the baby spinach and sprinkle the shredded cheese on top. Replace the lid and let spinach wilt and cheese melt.
  • In that last half hour, cook some bowtie noodles. Once done, spoon the chicken mixture over the noodles and serve.

    1. Hi Lesel, I wash & dice up as is. If it is particularly seedy, you could scoop some out, but I haven’t had that issue. And the skin is full of nutrients so eat that, too 🙂
