Slow Cooker Mushroom Steak Bites

Slow cooked until fall-apart tender, the perfectly seasoned steak tips are soaked in a beef flavored au jus that can just as easily be thickened into a gravy. Crockpot Mushroom Steak Bites

Steak bites have been a longtime family favorite in my house but as with any meal my whole family loves, I like to make variations so we don’t get tired of it.

I’ve made everything from slow cooker steak bites, garlic butter steak bites, and more recently my honey garlic steak bites and now I’ve started to add sliced tender mushrooms and a delicious au jus to the mix and it’s already a hit.

Sometimes I’ll even thicken the broth and turn it into gravy to take it up a notch. This is a great recipe for delicious beef tips and an easy way to feed the entire family simple comfort food.

Juicy slow cooker steak tips with mushrooms can be served over egg noodles, mashed potatoes, or rice. All you need is a simple vegetable side and you’ve got a fantastic dinner any night of the week.

Why you’ll love Slow Cooker Mushroom Steak Bites

Easy weeknight meal – Slow cooker meals are a lifesaver when it comes to making dinner throughout the busy school and work week.

Rich flavor – Juicy meat smothered in rich gravy is the stuff dreams are made of. Nicely seared on the outside, perfectly seasoned, and they are meltingly tender once cooked low and slow.

Easy prep and hands-off! – With just 10 minutes of prep time, the crockpot does the heavy lifting. Gone are the days when you need special occasions or a fancy restaurant to enjoy steak. The bite-sized pieces make it easy for kids to enjoy too!

Equipment you’ll need

  • Slow Cooker – A 6-quart slow cooker is standard for most crock pot recipes. This is my go-to.
  • Veggie Chopper – Makes chopping veggies a breeze.
  • Slotted Spoon – For serving and transferring the meat without the liquid.

Ingredients

Below is a list of the ingredients you’ll need to gather to make this recipe. Scroll all the way down for the full recipe card.

  • Stew Beef: Beef stew meat usually comes pre-cubed and packaged in the grocery store. It’s usually made from chuck roast or round roast which are pretty tough. They do well when cooked low and slow and can turn out quite tender. It may not be the best or most high-quality cut of beef out there, but for this crockpot steak bites recipe it’s all you need. Let’s keep it as budget-friendly as we can.
  • Mushrooms: White mushrooms are my favorite as they are the most tender and have a less intense flavor, but you can also use brown button mushrooms (cremini mushrooms) or chopped portobello if you prefer.
  • Onions & Garlic: Chopped white onions and minced garlic add flavor to the meat but also the broth.
  • Butter: Adds richness and a butter flavor that rounds out the entire recipe. It also makes the steak even more fork tender.
  • Beef Broth: Use low sodium beef stock or broth if you’re wanting to limit the amount of added salt.
  • Salt & Pepper: To taste.

How to make Slow Cooker Mushroom Steak Bites

  1. Step One: Sear the stew beef in a large skillet over medium heat. You’re just locking in flavor, there’s no need to cook it all the way through. It will continue cooking in the crockpot.
  2. Step Two: Once all sides are browned toss the beef into the basin of the crockpot then add the mushrooms, onion, butter, garlic, beef broth, and salt and pepper. Stir everything to combine.
  3. Step Three: Cover with the lid and cook on low for 4 hours until the beef is tender. Not all crockpots are created equal and because you know your slow cooker best, you’ll know if yours needs up to 6 hours.
  4. Step Four: Once it is ready, you can serve it as is, add a cornstarch slurry to thicken up the sauce, or transfer the beef and mushrooms to a skillet to caramelize over high heat. If choosing the latter, use a slotted spoon to make it easy to remove the beef and mushrooms from the pot.

What to serve with this slow cooker beef tips recipe

The best part of this meal, other than the most tender flavorful beef bites is the sauce that gets soaked into whatever you’re serving it with!

Egg noodles, roasted potatoes, garlic mashed potatoes, or rice are all great options.

A basket of dinner rolls is a must and a sauteed asparagus or oven roasted garlic green beans to round out one of the best cozy meal ideas.

Possible Substitutions/Additions 🥩🍄

  • You can add any additional seasonings you like to this, such as steak seasoning.  Worcestershire sauce or soy sauce is also fabulous and can help deepen the color. 
  • Dry onion soup mix can also be added for flavor.
  • This will produce a fair amount of juice, you can remove that before serving or turn it into a gravy using a cornstarch slurry.
  • Add extra veggies, like carrots or diced potatoes for added heartiness.
  • Don’t like mushrooms? Skip ’em!

How to store leftovers

Keep any leftover steak bites (and their juices) in an airtight container in the fridge for up to 3 days.

Can I freeze crockpot mushroom steak bites?

Absolutely! This recipe is great for make ahead freezer meals. You can make a lot and freeze half the batch for another day.

Keep stored in a freezer-safe container or freezer bag (I find this saves space when you can lay it flat) for up to 3 months. Thaw in the fridge overnight.

How to reheat them

Use the crockpot if you’ve got a lot to heat up. Keep the juices and use them to keep the steak tips and mushrooms moist as it reheats. You can add additional broth, if needed.

You can also use the skillet to save a bit of time.

Warming it in the microwave is also an option.

FAQs

What is the best cut of meat for the crockpot?

Chuck roast is what we’re using in this recipe and it’s right up there as one of the best. The low and slow method does wonders to tenderize it. Sirloin tips are also great, which I use in my slow cooker steak bites recipe, and to be honest, can be used interchangeably. Other great choices are flank steak and round steak.

Can I make mushroom steak bites in the Instant Pot?

Absolutely! Add the beef, mushrooms, and broth to the pressure cooker (no need to sear first unless you want to on saute mode).

Pressure cook on high for 17 minutes and naturally release the pressure for 10 minutes. Set the pot to saute and stir in any added seasonings, butter, and a cornstarch slurry to thicken it up.

How best to avoid burning?

It’s relatively hard to burn slow cooker mushroom steak bites because of all the liquid. However, it’s important to note that all slow cookers vary.

If the recipe says 4-6 hours, check on your steak bites at 4 hours. If you notice there is not enough liquid but they’re not quite ready yet, feel free to add another cup of broth.

  • 2 pounds stew beef
  • 8 ounces white mushrooms
  • cup white onion chopped
  • 6 tablespoons butter sliced
  • 3 cloves garlic minced
  • ¾ cup beef broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • In a large skillet over medium high heat add the stew beef and cook until browned. We are not thoroughly cooking the meat, just searing it to lock in flavor.
  • To the basin of a 6 quart slow cooker, add the seared beef, mushrooms, onion, butter, garlic, beef broth, salt and pepper.
  • Stir to combine.
  • Cover and cook on LOW for 4 hours, or until the beef is tender. Every slow cooker runs differently. Some may need up to 6 hours on LOW. I don't recommend cooking on HIGH.
  • Serve this as-is or use a slotted spoon to transfer the cooked beef and mushrooms to a hot skillet to get some color on them.
  • Serve!

Low sodium beef broth can be used. 
Store leftovers covered in the fridge for up to 3 days.
Every slow cooker runs differently. Times given are a general recommendation and should be tested in your own slow cooker and adjusted as needed.
