Soft Baked Peanut Butter Cookies with Dark Chocolate Chips

The other night I had a dream about peanut butter cookies so I woke up knowing I needed to make some. Is it weird to dream about cookies? My pregnancy appetite is different – my sweet tooth still isn’t quite back. That’s probably a good thing though, I gained my first three pounds this week. Without the help of many sweets.

Makes: 24 cookies

Ingredients
1/2 cup salted butter (1 stick)
1/2 cup light brown sugar
1/4 cup sugar
1 egg
3/4 cup peanut butter
1 teaspoon vanilla
1/2 teaspoon baking soda
1 1/4 cups flour
3/4 cup dark chocolate chips (I used a mix of Ghirardelli and Hershey’s this time)

Directions
Add the butter and sugars to a large bowl and cream on medium speed until combined.

Add in the peanut butter, egg, and vanilla, in that order, mixing between each addition. Scrape down the sides of the bowl as needed.

Add in the baking soda and flour, slowly, as you mix, until just combined. Do not overmix.

Pour in the chocolate chips and stir to distribute them.

Put the dough in the fridge to chill for at least 30 minutes.

Preheat the oven to 350 and line two baking sheets with parchment paper or silicone baking mats.

Use a cookie scoop to scoop 12 balls per cookie sheet. I stuck a few extra chocolate chips into the tops of the dough balls (& a few Reese’s Pieces into the tops of others).

Bake for 8-9 minutes. The cookies will look underdone, but they will continue cooking on the pan after you take them out. You want them to be soft, remember?
