SUMMER COBB SALAD

You guys. I think two year sleep regression is going to be the death of me. As I’ve mentioned, we recently potty trained Julia and she did amazing, but since then sleep has been fleeting. Google tells me it could be a mixture of her little brain brimming with new information (potty training & her vocabulary has exploded), or molars, or just knowing that things are going on after we put her to bed that she’d rather be involved in.

I’m averaging four hours of sleep per night and it’s catching up with me. Say a little prayer that we’ll get back to our regular (spoiled) sleep schedule soon.

Over the weekend, we went to Meijer for our weekly shopping trip. We were gathering everything we needed for these Summer Cobb Salads and making our way to the cheeses, which are at the back of the store, when Julia told me she had to go to the bathroom.

And the bathrooms are at the front. I sprinted through to the bathroom with her in tow yelling, “I gotta peepee!”. We made it.

Anyway, we finished getting everything we needed – raspberries were on sale for $0.77 (!) – and made our way home.

Perfect for the upcoming hot weather! The most labor intensive part was boiling the eggs and that’s not even labor intensive, it just takes a bit of time. I need more meals like this in my life, especially on little sleep. The fully cooked frozen chicken takes just minutes to warm in the microwave and you’re on your way to a simple and flavorful meal.

Summer Cobb Salad

Ingredients
 

  • 6 ounces Tyson Grilled & Ready Fully Cooked Grilled Chicken Breast Strips chopped
  • ½ cup Wish-Bone Italian dressing
  • 1 ¼ cups 10 oz bag chopped Romaine lettuce
  • 2 Tablespoons toasted almonds
  • ½ cup fresh blackberries
  • ½ cup fresh raspberries
  • 2 diced hardboiled eggs
  • ½ cup diced avocado
  • 2 Tablespoons crumbled blue cheese

Instructions

  • Pour your lettuce onto a large serving dish.
  • Make rows of each ingredient - the chopped chicken, toasted almonds, blackberries, raspberries, eggs, avocado, and blue cheese.
  • Drizzle the entire thing with Wish-Bone Italian dressing, toss and serve.
