Soft Chewy Chocolate Espresso Caramels

If you’re looking for a new caramel recipe – this is IT! These gloriously soft, chewy caramels are rich, intense, & perfectly balanced

Ingredients

Heat the butter, heavy cream, cocoa & espresso powders until hot but not boiling. Off heat, add the vanilla.

STEP 1

In another larger saucepan, cook the sugar & corn syrup, stirring occasionally, until the sugar is melted. 

STEP 2

Use a candy/cooking thermometer to boil the caramel, stirring occasionally, until it reaches 245° F.

STEP 3

Remove it from the heat & immediately pour it into a prepared pan. Let it set for about 5 mins & then sprinkle on flaky sea salt.

STEP 4

Finally, allow to cool & set for approximately 5 hours - then cut & serve.
