STEP 1

Spray the slow cooker with non-stick spray. Cut English muffins and bacon and add to the slow cooker.

STEP 2

Top with the diced peppers and spinach and stir to evenly distribute.

STEP 3

In a bowl, combine eggs, heavy cream, salt, pepper, and minced garlic. Whisk and then pour into the slow cooker.

STEP 4

Cover and cook on low for 5 hours. Top with cheese, and cook for another  15 mins. 

STEP 5

Add egg yolks, lemon juice, dijon, garlic, and pepper to a blender. Purée for 10 seconds. Add the melted butter. 

STEP 6

Serve casserole with a drizzle of hollandaise sauce and garnish.
