This is a really easy breakfast meal that you can throw together at night and wake up, put it in the slow cooker, and it’s ready for brunch on Sunday morning!

Spray the slow cooker with non-stick spray. Cut English muffins and bacon and add to the slow cooker.

Top with the diced peppers and spinach and stir to evenly distribute.

In a bowl, combine eggs, heavy cream, salt, pepper, and minced garlic. Whisk and then pour into the slow cooker.

15 mins.

Add egg yolks, lemon juice, dijon, garlic, and pepper to a blender. Purée for 10 seconds. Add the melted butter.
