PERSNICKETY PLATES

– Active yeast – Warm water – Salt – All purpose flour

Dissolve yeast in warm water for 5 minutes. Add salt and flour and with the dough hook, beat.

Add additional flour until a rough, shaggy mass is formed. Knead for 8 minutes.

Turn dough onto a floured surface. Form dough into balls, then flatten with a rolling pin into discs.

Let rest for 30-40 minutes. Flip the discs upside down onto a baking sheet. Bake 10-15 minutes.
