STEP 1

To a slow cooker, add the chicken stock, potatoes, onion, pepper, and ham, reserving ½ cup of the ham. Stir together.

STEP 2

Cover and cook on LOW for 6 hours. Add in the evaporated milk, cubed cream cheese, and the shredded cheddar.

STEP 3

Stir together, breaking apart some of the potatoes. Replace cover and let cheeses melt.

STEP 4

In a skillet over medium high heat, add the reserved ham and pan fry until crisp.

STEP 5

Serve soup topping with  cheese, fried ham, and scallions.
