To a cast iron skillet, add the ground beef and break it up. Place in skillet and cook for 25-30 mins.

Add in the onion, jalapeno, chipotles, green chiles, tomatoes, the oaxaca cheese, and the shredded Mexican cheese blend.

Move the skillet back to the smoker and let it cook for 1 hour. Stir and add milk. Stir then cook for 20 more minutes.

Sprinkle shredded cheese over the top and let cook 20-30 minutes. Top with tomatoes, onions, jalapenos, or cilantro.
