PERSNICKETY PLATES

– Cream cheese  – Unsalted butter – Vanilla extract – Powdered sugar – Shredded coconut – Light brown sugar – Ground cinnamon

In a bowl, add the cream cheese, butter and vanilla and beat. One cup at a time, stir in the powdered sugar, and blend.

Mix in the shredded coconut. Refrigerate the coconut candy mixture for 30 minutes.

In a bowl, combine the brown sugar and cinnamon. Portion the coconut mixture into “potatoes”.

Roll each piece of candy in the brown sugar-cinnamon mixture.
