The Best Chicken Tortilla Soup

This is an easy copycat recipe of the classic On the Border tortilla soup!

First, season the chicken and set aside.

~ Add the broth, diced onion & salsa to a soup pot & heat until boiling. ~ Once boiling, add in the seasoned chicken & cook until no longer opaque!

Carefully remove the cooked chicken, shred it, and add it back to the pot.

Next, add in the rice & chopped zucchini. Cook 15 mins or until the rice is tender.

Finally, scoop the soup into bowls & top with fresh cilantro & whatever toppings you like!

Serve & enjoy!
