STEP 1

In a bowl, whisk the flour, salt, baking soda and baking powder.

STEP 2

To another bowl, add the sugar and the lemon zest. Use your hands to squeeze the lemon zest into the sugar.

STEP 3

Pour the vegetable oil into the sugar mixture and use a hand mixer on medium to beat for approximately 2 minutes.

STEP 4

Add the eggs and beat for 30 seconds. Add the lemon juice and vanilla and beat. Pour in the flour mixture and stir.

STEP 5

Add the grated zucchini and stir. Pour the batter into the prepared loaf pan. Bake for 45-50 minutes. Let cool.

STEP 6

Whisk the powdered sugar and lemon juice. Pour the glaze over the bread and allow to set. Slice and serve!
