Turkey and Stuffing Air Fryer Egg Rolls are the perfect way to use up Thanksgiving leftovers, but they also make an easy and unique weeknight meal!

– Chicken stock – Stuffing (1 box) – Fresh thyme  – Fresh rosemary  – Turkey breast cooked & cubed – Egg all ingredients below

Bring the chicken stock to a simmer. Remove from the heat & stir in the stuffing, herbs & cubed turkey.

STEP 1

Lay out one egg roll wrapper so it looks like a diamond. Brush the egg wash along the edges of the wrapper.

STEP 2

Scoop 2 tbsps of the stuffing mixture and lay across the egg roll wrapper.

STEP 3

Bring the bottom of the wrapper up first, then the left side, then the right, tucking & rolling tightly.

STEP 4

Place seam side down in the air fryer. Cook for 6 mins, then use tongs to flip the egg rolls, lightly spray again & cook another 4 mins.
