Crockpot Sweet and Sour Chicken made with FOUR ingredients that tastes just like takeout. This slow cooker recipe is the perfect easy weeknight dinner.
In a medium bowl, whisk together the apricot preserves, soy sauce, and rice vinegar.
Carefully pour the mixture over chicken in the crockpot.
Cover and cook on HIGH for 4 hours or LOW for 6 hours.
Serve with rice and top with green onions and sesame seeds. Sauce will thicken as it cools.

Try pineapple preserves as an alternative.To thicken sauce, make a slurry by mixing 3 Tablespoons cornstarch and ¼ cup of the sauce from the slow cooker in a small bowl. Once the mixture is smooth, add back to the slow cooker.Store leftovers covered in the fridge for 3-4 days.
