Slow Cooker Chicken Gnocchi Soup (Olive Garden Copycat)
This creamy Slow Cooker Chicken Gnocchi Soup is an Olive Garden copycat recipe. Filled with shredded chicken, potato gnocchi, and spinach, this soup is super simple to throw together in the crockpot!

Ingredients

boneless skinless chicken breasts
(approx. 3 chicken breasts)

matchstick carrots
1
cup
diced onion
2
stalks
celery
diced
3
cloves
garlic

italian seasoning

chicken stock

potato gnocchi

cups
heavy cream

cups
fresh baby spinach
1 ½

shredded Parmesan cheese
salt and pepper

Instructions
To the bottom of a 6 quart slow cooker, add the chicken, carrots, onion, celery, garlic, italian seasoning and chicken stock.
1 pound boneless skinless chicken breasts,
2 cups matchstick carrots,
1 cup diced onion,
2 stalks celery,
3 cloves garlic,
3 ½ Tablespoons italian seasoning,
4 cups chicken stock
Cover and cook on HIGH for 4 hours or LOW for 6 hours.
30 minutes before you are ready to serve, remove the chicken from the slow cooker and shred with two forks and return to the slow cooker.
Add the gnocchi and heavy cream, replace the cover and cook an additional 30 minutes.
1 pound potato gnocchi,
2 cups heavy cream
Right before serving, stir in the spinach and cheese until wilted and melted.
2 cups fresh baby spinach,
1 ½ cup shredded Parmesan cheese
Taste and season with salt and pepper, if needed, and then ladle into bowls to serve.

Notes
Store leftovers covered in the fridge for up to 3 days.
Kale can be used in place of spinach.
Try different flavors of gnocchi.
