Easy homemade cool whip (stabilized whipped cream) is a simple way to add a touch of elegance to all your favorite desserts and hot drinks! In a small microwave-safe bowl, whisk together the gelatin and water; set aside.
In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until just thickened, not to the point of stiff peaks.
Heat the gelatin mixture in the microwave for 5 seconds until melted.
With the mixer on medium speed, very slowly drizzle the melted gelatin into the whipped cream. Once the gelatin is incorporated, increase the speed to medium-high and beat until stiff peaks form.
Use immediately for decorating, or chill until use.

Store covered in the fridge for up to 3 days. Stir well before using.
For decorating, it’s best to use the whipped cream when freshly made.
