Easy apple blondies with peanut butter chips are a chewy, decadent dessert bar made with fresh apples, cinnamon, nutmeg, brown sugar, and little flecks of peanut butter chips! The entire batch is baked and ready to serve in under 1 hour making these the perfect treat to serve for any occasion!

Instructions
Preheat the oven to 350° F and spray an 8 x 8 baking dish with non-stick spray. Set aside.
In a large bowl (or the bowl of your stand mixer), add the butter, sugar, egg, and vanilla and beat until fluffy.
½ cup unsalted butter, 1 cup granulated white sugar, 1 large egg, 1 teaspoon vanilla
In another medium bowl, add the flour, salt, baking powder, baking soda, cinnamon, and nutmeg and whisk together.
1 cup all purpose flour, ¼ teaspoon salt, ½ teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon cinnamon, ½ teaspoon nutmeg
Pour the dry mixture into the wet mixture and stir with a spatula until just blended.
Fold in the diced apples and peanut butter chips.

Spread the batter evenly into your prepared pan.
Sprinkle the light brown sugar over the top.
¼ cup light brown sugar
Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Let cool on a rack before slicing.
Notes
Store leftovers covered at room temperature for up to a week.For a more cake-like texture, instead of 1/2 cup of butter, use 1/4 cup of butter and 1/4 cup of applesauce
