Peanut Butter Brownies are a simple, from scratch, brownie filled with chunky peanut butter and topped with peanut butter chips. Perfect for the chocolate + peanut butter lover in your life!

Instructions
Preheat your oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray and set aside.
In a small saucepan, melt the butter and chocolate squares together over low heat. Once fully melted, remove from the heat and let cool. [You could also do this in the microwave in a microwave safe bowl.]
¼ cup unsalted butter, 2 ounces unsweetened baking chocolate
In the bowl of a stand mixer (or a large bowl with a hand mixer), cream together the sugar and peanut butter.
1 cup granulated white sugar, ¼ cup unsalted butter
Add in the the butter/chocolate mixture and vanilla. Mix.
½ teaspoon vanilla extract
Mix in one egg at a time.
2 large eggs
Add in the salt and flour and mix to combine. Scrape down the sides of the bowl as needed.
¼ teaspoon salt, ½ cup all purpose flour
Pour into your prepared baking dish and sprinkle with a handful of peanut butter chips.

Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let cool in the pan before slicing.
Notes
Makes 9-12 brownies depending on how generous you cut them.Store leftovers in an airtight container at room temperature for up to 4 days. Smooth or crunchy peanut butter can be used.
