To a large bowl, whisk together the marinade ingredients.
Trim any fat from the chicken, cut into strips, and place into the bowl of marinade. Cover and let marinate in the refrigerator for at least 2 hours, up to 5 hours.
After the chicken is done marinating, thinly cut the onions and peppers into strips.
Heat a large skillet over medium high heat, add the olive oil, and then add the sliced onions and bell peppers. Season with sat and pepper to taste.
Saute the peppers and onions until tender, approximately 4-5 minutes. Remove from the pan and set aside.
Add additional olive oil to the pan and then add the chicken, discarding the remaining marinade. Stir the chicken occasionally until cooked through. Add the peppers and onions back to the pan.
To assemble, warm a tortilla and pile chicken in the center with your favorite toppings.
