Ingredients

dry noodles
cooked and drained
¼
cup
red onion
minced, soaked in cold water for 5 minutes, drained

tablespoon
parsley
minced (dried or fresh)

cup
diced tomato
½
cup
diced cucumber
½
cup
mayonnaise
¾
teaspoon
dry mustard
1 ½
teaspoons
sugar
1 ½
tablespoons
apple cider vinegar

tablespoons
sour cream
½
teaspoon
salt
plus more to taste
black pepper
to taste
Instructions
Pour the cooked noodles into a large bowl. Add in the onion, parsley, tomato & cucumber.
In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt.
Pour the dressing over the noodles and diced veggies and stir to combine.
Store covered in the refrigerator.
Notes
Store leftovers covered in the fridge for up to 3 days.
