8x8 brownie recipeprepared. I recommend this one or you could use your favorite boxed mix
Orange frosting - I used a limited edition Candy Corn flavor by Betty Crocker. Pillsbury also makes an orange frosting in their Funfetti line. Or make your own & dye it orange. Up to you.
Chocolate frosting for decorating - I used Dark Chocolate Fudge
Instructions
Lightly spray a mini muffin pan with non-stick spray. I like Trader Joe's coconut oil spray. Set aside.
Prepare your brownie mix - whichever one you may be using.
Use a cookie scoop to fill each muffin well with batter. If you used an 8x8 recipe, it should fill all 24 wells.
Bake for 13-15 minutes or until tops are set.
Remove from oven and let cool. Pop the brownie bites out of the pan - you might need to gently run a butter knife around the edge if they're stuck.
Scoop some orange frosting (about 1/4 cup) into a microwave safe bowl and heat for approximately 10 seconds. Stir. You want the frosting to be slightly melted but not runny. If it got too liquidy, let sit for a couple minutes to come back together.
Dip each brownie bite into the orange frosting and let the excess drip off. I dipped each one twice to fully coat them.
Let the frosting harden.
Meanwhile, put some chocolate frosting into a piping bag fitted with a small tip (you can also just scoop it into a plastic sandwich bag and snip the very tip, but you have more control with a piping bag).
Decorate the brownie bites with some jack-o-lantern faces. Have fun!
