Best Cheesy Chicken Fajita Casserole!

This Fajita Casserole is so easy to make – just dump everything into one dish & bake!

First, saute the diced onion & peppers in olive oil over medium high heat in a large skillet for 4-5 mins or until tender.

Next, turn the heat to low  & add the chicken, cream cheese, fajita seasoning & half of the shredded cheese.  Heat until melted, stirring often.

Finally, pour the mixture into a greased casserole dish.

Top with the remaining cheese & bake for  25-30 minutes melted  & bubbly!

If serving as a dip, serve with tortilla chips & celery sticks. If serving as an entree, it is good with rice or rolled up into a tortilla!
