Slow Cooker Chicken Thighs with Potatoes & Carrots is an easy recipe that makes your entire dinner right in the crockpot! 👉

STEP 1

Season and sear the chicken in a large skillet for 3-4 minutes until browned.

STEP 2

Place the chopped potatoes, carrots, garlic & onion in the bottom of a slow cooker and lay the seared chicken on top.

STEP 3

Pour in the chicken broth and cover and cook as directed. 

STEP 4

After cooking, remove the chicken and vegetables from the slow cooker and make a slurry by mixing the cornstarch and water and pouring into the drippings.
