Easy, No-Bake Irish Potato Candy

With a truffle-like consistency and a sweet and tangy flavor, these popular St. Patrick’s Day candies are always a hit!👉

– Cream cheese  – Unsalted butter – Vanilla extract – Powdered sugar – Shredded coconut – Light brown sugar – Ground cinnamon

STEP 1

Beat together the cream cheese, butter & vanilla until fluffy. Mix in powdered sugar & the shredded coconut. 

STEP 2

Chill the cream cheese mixture for 30 mins. In the meantime, combine brown sugar & cinnamon in a bowl.

STEP 3

Scoop out 1 tbsp at a time of the chilled coconut mixture and form them into oblong shapes (little potatoes) with your hands.

STEP 4

Roll each piece of candy into the cinnamon sugar mixture until fully coated.

STEP 5

Serve immediately or store in the refrigerator for up to a week!
