Easy Crock Pot Frito Chili Pie is soul-warming comfort food that is made with slow-cooked beefy chili, crunchy Fritos corn chips, and melted cheese served over more crunchy Fritos. This hearty recipe is so easy to make using simple ingredients, serves a dinner crowd, and is a fan favorite no matter the occasion!
In a large skillet over medium high heat, add the ground beef, breaking apart as it cooks, until no longer pink. Drain any grease, if needed.
To the basin of a 6-8 quart slow cooker, add the cooked ground beef, onion, bell peppers, chili seasoning, green chiles, beans, tomato sauce, cornstarch, and sugar. Stir together until evenly distributed.
Cover and cook on LOW for 4-6 hours.
Before serving, stir in 1 cup of the shredded cheddar cheese and top with half of the corn chips. Top with the remaining cheese and replace the cover until the cheese melts.
To serve, lay out some corn chips, top with a scoop of chili, then add your favorite toppings!

Store leftovers in an airtight container in the fridge for up to 4 days.To add heat, add diced jalapenos or cayenne pepper. If you plan to freeze this meal, prepare until the corn chip step and freeze for up to 3 months. When ready to enjoy, add the corn chips.
