Copycat Savannah Smiles - Lemon Powder Sugar Cookies
These copycat Savannah smiles are my take on the original Girl Scout cookie recipe made with simple ingredients and ready in under 30 minutes! These crisp, buttery, sweet, and lemon-infused cookies are coated in powdered sugar, making them as irresistible as you'd imagine. One bite and you'll see why these are such a hit!
Preheat oven to 350° F and line two baking sheets with parchment paper or silicone mats. Set aside.
In a small mixing bowl, add the flour and salt and whisk together.
In a large mixing bowl, add the butter and 1/2 cup of the powdered sugar. Use a hand mixer on medium to beat until light and creamy, about 2 minutes.
Add in the vanilla extract, lemon juice, and lemon extract (if using). Beat until smooth.
Pour in the flour mixture to the wet mixture and beat on low until just combined.
Use a medium cookie scoop (#40, approximately 1 tablespoon) to portion out the cookie dough.
Use the palm of your hand or the bottom of a glass to form the dough balls into circles and then cut in half to form the smile shape.
Place on the prepared baking sheets, leaving approximately 1” between them.
Bake for 10 minutes, remove from the oven and let cool on the pan for 2 minutes.
Once slightly cooled, pour the remaining powdered sugar into a shallow bowl and toss the cookies in it until evenly coated.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week.You can use freshly squeezed lemon juice or bottled lemon juice.For extra lemon flavor, add some lemon zest to the cookie dough.
