Bright red and green Christmas jello roll ups are the perfect Christmas treats for adults and kids. Everyone loves their sweet taste and super-fun texture.
Generously spray two 8x8 baking dishes with non-stick spray and set aside.
To a small microwave safe mixing bowl, pour in the strawberry gelatin mix and ½ cup of water and stir to combine. Microwave for 1 minute and 30 seconds.
Carefully remove the bowl from the microwave and add 1.5 cups of mini marshmallows. Microwave for another 60 seconds.
Carefully remove the bowl from the microwave and stir until the marshmallows are fully melted and smooth.
Pour the mixture into one of the prepared pans and move to the refrigerator to cool for at least 2 hours.
Repeat the process for the second pan of lime gelatin.
After two hours, once both pans have set, run a knife along the edge of the pans to loosen.
Slice down the middle of each pan and lay out a piece of parchment paper.
Use a spatula to lift one half of the jello from the pan and lay it onto the parchment paper, marshmallow side up.
Start with the short end, roll the slice of jello up and place it seam side down onto a cutting board.
Repeat with the other three portions of jello.
Once rolled, use a knife to slice the roll into approximately ½” slices.
Notes
Any color/flavor of gelatin can be used.
Leftovers should be stored covered in the fridge for up to 3 days.
12 regular sized marshmallows can be used in place of the mini marshmallows.
