Slow Cooker Cajun Chicken Alfredo
This Slow Cooker Cajun Chicken Alfredo is full of chicken, peppers, andouille sausage, and a homemade alfredo sauce made right in your crockpot.

Ingredients

pound
boneless skinless chicken breasts

heavy cream

frozen peppers and onions

andouille sausage
sliced into rounds

penne pasta

Salt and pepper to taste
Instructions
To the slow cooker, add the chicken, heavy cream, butter, and broth. Sprinkle seasonings all over.
1 pound boneless skinless chicken breasts,
2 cups heavy cream,
2 tablespoons butter,
14.5 ounce chicken broth,
1 tablespoon cajun seasoning,
1 teaspoon paprika
Pour in the minced garlic, pepper and onions.
3 cloves garlic,
1 cup frozen peppers and onions
Add the sliced sausage.
14 ounces andouille sausage
Cover and cook on HIGH for 2 hours or LOW for 4 hours.
Remove the chicken, slice and set aside.
Add the pasta to the slow cooker, stir and cover.
1 pound penne pasta
Let the pasta cook for 30 minutes until tender.
Place the chicken back in the slow cooker, top with parmesan cheese, and additional salt and pepper, if needed. Stir to combine.

Garnish with fresh chopped parsley, serve, and enjoy!
Notes
If you like a little color on your chicken, season and give it a quick sear before adding it to the slow cooker.
You can use any sausage you like if andouille has too much kick for you.
Instead of breasts, you can use boneless skinless chicken thighs.
You can omit the peppers and onions or use fresh if you would like.
If you don't have penne pasta, any short noodle will work. Or cheese tortellini.
Store leftovers in an airtight container in the fridge for up to 3 days.
Every slow cooker runs differently. Times given are a general recommendation and should be tested in your own slow cooker and adjusted as needed.
