Rotel Southwest Chicken Skillet

One pot and 30 minutes are all you need for this Rotel Southwest Chicken Skillet! Big flavor without a lot of effort.

STEP 1

Season your chicken with salt, pepper, Montreal chicken seasoning, red pepper flakes – whatever you like.

STEP 2

Add some olive oil to your pan and saute the chicken until no longer pink.

STEP 3

Stir in uncooked rice, can of Rotel, can of tomato sauce, and water. Bring it to a boil then cover it.

STEP 4

Turn the heat to low and let it simmer for 10 minutes, stir so it doesn’t stick, then cook another 10 minutes.
