Spray the bottom of a 6 quart slow cooker with non-stick spray.
Cut the chicken into small pieces and season with salt & pepper. Add it to the slow cooker.
Pour in the pasta sauce, chopped zucchini, diced onion, and minced garlic. Stir to combine.
Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
One half hour before the cook time is up, stir in the baby spinach and sprinkle the shredded cheese on top. Replace the lid and let spinach wilt and cheese melt.
In that last half hour, cook some bowtie noodles. Once done, spoon the chicken mixture over the noodles and serve.
