Slow Cooker Chicken & Zucchini

Make this Chicken, Zucchini, and Spinach right in the slow cooker. Eat alone or spooned over your favorite noodles.

  • 1.5 lbs boneless skinless chicken breasts, cubed
  • 1 jar ~26 oz your favorite pasta sauce
  • 2 medium zucchinis chopped
  • 1 small onion diced
  • 1 Tablespoon minced garlic
  • salt & pepper to taste
  • 2 cups fresh baby spinach
  • your favorite shredded cheese I used an Italian blend


  • Spray the bottom of your slow cooker with non-stick spray.
  • Cut your chicken into small pieces and season with salt & pepper.
  • To the slow cooker, add in the cubed chicken, pasta sauce, chopped zucchini, diced onion, and minced garlic. Stir to combine.
  • Cook on low for 7-8 hours.
  • One half hour before done, add in the baby spinach and sprinkle with about 1/2-1 cup of shredded cheese. Replace lid and let spinach wilt and cheese melt.
  • In that last half hour, I made some bowtie pasta to serve with the chicken and zucchini.
  • Spoon mixture over noodles and serve, or it's good as is.
