Spray the bottom of your slow cooker with non-stick spray.
Cut your chicken into small pieces and season with salt & pepper.
To the slow cooker, add in the cubed chicken, pasta sauce, chopped zucchini, diced onion, and minced garlic. Stir to combine.
Cook on low for 7-8 hours.
One half hour before done, add in the baby spinach and sprinkle with about 1/2-1 cup of shredded cheese. Replace lid and let spinach wilt and cheese melt.
In that last half hour, I made some bowtie pasta to serve with the chicken and zucchini.
Spoon mixture over noodles and serve, or it's good as is.
