2Tbsesame oilor vegetable oil

Heat a large skillet over medium heat. Add the sesame oil, onions, and carrots. Saute until carrots & onions are tender.
Add the peas to the pan and stir.
To a small bowl, add the eggs and whisk together with a fork.
Push the veggies to one side of the skillet and pour the eggs on the other side. Use a spatula to scramble them. Once fully cooked, stir into the veggie mixture to evenly distribute.
Add the cooked rice and chicken and stir. Mix well.
Add the soy sauce and stir to distribute.
Add the butter and stir until melted and distributed.
Season with salt & pepper, if needed.
Start with leftover cooked white rice.Use fairly bland cooked chicken (like a rotisserie chicken) for the best results.If you're short on time and don't want to dice vegetables, you can use a frozen veggie blend.
