The meat in these slow cooker honey lime chicken tacos is tender, juicy, and full of flavor. With just 5 minutes of prep time, the crockpot does the heavy lifting, and because there are so few ingredients involved, you may already have what you need on hand! Add the chicken breasts to the basin of a 6 quart slow cooker.
2 pounds boneless skinless chicken breasts
In a small bowl, stir together the fajita seasoning, lime juice, honey, chicken stock, garlic and paprika.
3 Tablespoons fajita seasoning, ½ cup lime juice, ½ cup honey, ¼ cup chicken stock, 3 cloves garlic, ½ teaspoon paprika
Pour the sauce mix over the chicken.
Cover and cook on LOW for 4-6 hours or HIGH for 3-4 hours.
Once done, shred the chicken and return to the juice in the slow cooker.
lime and parsley to garnish
Serve on tortillas with your favorite toppings.

Chicken thighs can also be used.
To add heat, you can add jalapenos or red pepper flakes.
Store leftovers covered in the fridge for up to 3 days.
Optional toppings: shredded pepper jack cheese, cotija cheese, chopped cilantro or parsley, sliced grape tomatoes or pico de gallo, lime slices, etc.
Freezer directions:Prepare as directed and pour into a gallon freezer bag. Freeze for up to 3 months. Thaw overnight in the fridge and then cook as directed.You can use a packet of fajita seasoning or make you own:
