Slow Cooker Chicken Bacon Ranch Sandwiches
Slow Cooker Chicken Bacon Ranch Sandwiches (aka Crack Chicken) are an easy hit! Chicken, cream cheese, and ranch seasoning cook together in the crockpot before getting mixed with cheddar, bacon, and scallions and then piled onto soft buns.

Ingredients
1-2
lbs
boneless skinless chicken breasts
16
ounces
cream cheese
cubed
2
Tablespoons
ranch seasoning mix
or 1 packet

cheddar cheese
shredded

slices
bacon
cooked and chopped

scallions
chopped

Instructions
To the basin of a 6 quart slow cooker, lay in the chicken breasts.
Sprinkle the ranch seasoning over the top.
Place the cubed cream cheese on top of the chicken.
Cover and cook on LOW for 6 hours or HIGH for 4 hours.
Once the chicken is cooked through, stir to distribute the cream cheese sauce, then use two forks to shred the chicken.
Stir in the the crumbled bacon and scallion and 1 ½ cups of cheddar cheese.
Sprinkle the rest of the cheese across the top.
Cover and let the cheese melt for 10 minutes.
Pile onto buns and serve!
Notes
Add hot sauce or jalapenos for a kick.
As an alternative to sandwiches, it is also great served over pasta, potatoes, rice.
Store leftovers covered in the fridge for up to 3 days.
