A hoagie salad, aka Italian sub pasta salad, has all the salty, briny, and zesty flavors of the popular Italian sub in one bowl. It's a satisfying combination of all our favorite hoagie fillings like Italian deli meats and cheeses, crunchy bell peppers, tomatoes, cucumbers, banana peppers, and spinach tossed in a creamy Italian dressing!
To a large mixing bowl, add the cooked pasta, cucumber, green bell pepper, red bell pepper, tomatoes, onion, spinach, salad peppers, salami, pepperoni, ham, and provolone.
1 pound tri colored rotini, 1 medium cucumber, 1 medium green bell pepper, 1 medium red bell pepper, 1 cup cherry tomatoes, 1 small red onion, 2 cups fresh spinach, 1 cup banana peppers, ¼ pound deli ham, ¼ pound salami, 1 cup pepperoni, ½ pound provolone cheese
To make the dressing, add the mayo, Italian dressing, Italian seasoning, black pepper, and parmesan cheese to a medium mixing bowl.
1 cup mayonnaise, 16 ounce italian dressing, 1 teaspoon italian seasoning, ½ teaspoon black pepper, ¼ cup grated parmesan cheese
Pour the dressing over the salad and gently toss to combine until evenly coated.
Cover and move to the fridge to chill for at least 4 hours before serving.
When ready to serve, sprinkle with parsley.

Notes
Remember to generously salt the water when boiling the pasta.
Provolone cheese can be diced from slices or a block of cheese.
If using English cucumber, wash and dice. If using a regular cucumber, you may want to peel first.
Switch up the shape of pasta or types of vegetables and meats and cheeses if you want.
Some other options: black olives, green olives, hot & sweet peppers, etc.
Store leftovers in an airtight container in the fridge for up to 5 days.
Serves 12 generously as a side, or around 8 as a main meal.
