These no-bake Ritz cracker cookies have the perfect combination of sweet and salty flavors. Sweet peanut butter filling is sandwiched between two crispy salty Ritz crackers and then dipped in melted white chocolate and coated with sprinkles! They’re light and crispy, salty, sweet, and fun for the whole family to enjoy throughout the holiday season!

Chocolate Dipped Ritz Sandwich Cookies

Baking is one of the most fun things to do together over the holidays! There are so many easy Christmas desserts that are fun to make. Then, you can either keep them and eat them or add them to a cute tin and give them away.

Even though these Ritz cracker cookies are a no-bake dessert, they are just as fun and super easy! Just let the chocolate coating set and they are ready to eat.

Just like no-bake avalanche cookies, these sandwich cookies will look perfect on your holiday cookie tray. They only have five ingredients (six, if you count the sprinkles). So they are so easy to whip together that you can make them with kids, or with your friends. 

The sprinkles are optional, but definitely use them! The red and green sprinkles go so well with other red and green holiday desserts, like Christmas pinwheel cookies and butter cookies with sprinkles. The sweet and fluffy peanut butter filling is what sets these cookies apart from all the others (and it’s why you’ll love them so much).

Below is a list of the ingredients you’ll need to gather to make this recipe, why you need them, and possible substitutions. Scroll all the way down for the full recipe card with measurements.

  • Ritz Crackers – These are the base of the cookies. They’re a buttery cracker that is light and crisp and has a sprinkling of salt on the outside.
  • Peanut Butter – For the best texture, use creamy peanut butter. Avoid natural peanut butter as it will be too oily and too runny. 
  • Powdered Sugar – This sweetens the peanut butter without making it gritty.  
  • White Chocolate Chips – We’re using white chocolate because it’s a bit sweeter and I just love how the sprinkle pops on the white background. You can choose to use dark or milk chocolate chips for your chocolate peanut butter ritz cookies if you prefer. 
  • Coconut Oil – Adding oil to the melted chocolate helps to smooth it out and make it easily pourable. It also gives it a bit of a sheen and prevents it from seizing.   
  • Christmas Sprinkles – Even though they are optional, holiday sprinkles add a fun flair to the cookies.

How to make Ritz Cracker Cookies

  1. Step OneCream the peanut butter with the powdered sugar until it is smooth.

  1. Step Two: Spread the peanut butter mixture on half of the Ritz crackers and top with the other half, making sandwich cookies.

  1. Step Three: Mix the coconut oil with the white chocolate chips and melt them together in the microwave in a microwave safe bowl.

  1. Step FourUsing a fork or chocolate dipper, dip one sandwich cookie completely into the white chocolate at a time, allowing any excess chocolate to drip off. Then, place the cookies onto the parchment-lined cookie sheet. Top with sprinkles right away.

  1. Step Five: Place the tray into the fridge to allow the cookies to set. Enjoy this no bake sweet and salty treat sooner than later, believe me, chocolate-covered Ritz cookies never last long!

These easy no-bake sandwich cookies are the perfect holiday desserts! Give them away on a cookie tray or set them out at your holiday dinners or parties. The Christmas sprinkles will look fantastic with other festive desserts, like chocolate chip Christmas cookies or Grinch Oreo truffles

Since Ritz cookies are made with kid-friendly ingredients, serve them with some fun desserts – like Snowman Oreo balls and chocolate cherry mice

​With that being said, just a quick swap of the sprinkles can make these little cookies the perfect recipe for tons of other occasions! Think birthday parties, Valentine’s Day, baby showers, and even celebratory new mom cookies! 

Tips & Suggestions

  • Reduce or omit the powdered sugar if you prefer a less sugary treat. 
  • Vegetable oil or vegetable shortening can be used in place of coconut oil.
  • Swap the creamy peanut butter filling for a different nut butter. Try almond butter or cashew butter for a twist.
  • If you prefer to use chocolate wafers (aka chocolate candy melts) feel free. Chocolate almond bark is another option. 
  • Use a different kind of chocolate. Semi-sweet, milk, or dark chocolate can be used in place of white chocolate.
  • For extra shimmer, add edible glitter to the melted white chocolate.

How to store leftovers

Store the Ritz sandwich cookies in an airtight container or bag at room temperature in a cool place. If your kitchen is too warm, you can store them in the refrigerator. If you’re layering them, separate them with layers of wax paper.

It’s best to eat the no-bake cookies within 1 week.

Can I freeze Ritz cookies?

Yes, you can freeze the cookies. First, place them in a single layer on a parchment-lined baking tray and put the tray in the freezer. Once the cookies are frozen solid, place them together in a freezer bag. They will stay fresh in the freezer for up to six months.

FAQs

How do you make gluten-free sandwich cookies?  

Since Ritz crackers aren’t gluten-free, I suggest buying a different brand. Lance makes gluten-free crackers that taste just like Ritz. Or you can use your cracker of choice.

What else can I top my cookies with?

Flaky sea salt is always a great way to add a little extra salty flavor to the sweet cookie. You can also use extra melted chocolate to drizzle, gold flakes for pizzaz, chopped nuts, chopped peppermint candy or candy cane, a caramel drizzle, you name it.

No Bake Ritz Cracker Cookies

These no-bake Ritz cracker cookies have the perfect combination of sweet and salty flavors. Ingredients
 

  • 40 Ritz Crackers
  • ¾ cup Peanut Butter
  • cup Powdered Sugar
  • 1 ½-2 cups White Chocolate Chips
  • 1 tablespoon Coconut Oil
  • 2 tablespoon Christmas Sprinkles

Instructions

  • Line a baking sheet with parchment paper and lay out 20 crackers salted side down.
  • To a large mixing bowl, add the peanut butter and powdered sugar. Mix together with a hand mixer on low-medium until smooth.
  • Use an offset spatula, or just a knife, to spread the peanut butter mixture evenly onto the 20 crackers and top with another cracker.
  • Add the chocolate chips and coconut oil to a microwave safe bowl and heat for 20 seconds, stir, repeating until melted and smooth. It should not take more than a minute.
  • Using a fork or a chocolate dipping tool, dip one cracker sandwich at a time into the melted chocolate, covering it completely, and letting any excess drip off. Return to the parchment paper and immediately top with sprinkles.
  • Repeat for the rest of the cookie sandwiches and then move the pan to the fridge to set.
