- Chop protein and veggies evenly. This is to ensure everything is similar sized and will cook evenly. I love using a veggie chopper to help with this.
- Layering matters. Denser ingredients like root veggies should go on the bottom, and softer ingredients should go on top. Proteins can be nestled in, on top of, or on the bottom layer for even cooking.
- Browning or sauteing first. Either is optional, but browning meat or sauteing onions does add that extra layer of flavor. My newest GreenPan slow cooker allows me to do it right in the pot which is super handy.
- Add dairy and fresh herbs towards the end (the last 30 minutes). If they cook too long, they can start to break down/curdle.
- Check on it midway. Some liquid will evaporate over time, so if it’s too thick, you can add a bit more broth.
- Season as you go, then season to taste at the end.
- If you’re going to freeze the soup, add the dairy in once you reheat it.
- Cook pasta separately and add it before serving. It absorbs too much liquid and will be mushy otherwise.
- Freeze smaller portions. You can thaw and reheat what you need. Don’t forget to label the containers! I love using Souper Cubes for perfect portions.
- Reheating. Use a gentle heat. Reheat slowly on the stovetop, back in the crockpot, or in the microwave. Stir often.
- Liven it up just before serving. Fresh herbs, a squirt of lemon juice, Parmesan cheese, or a bit of salt!

- Use the right size crockpot for the amount of ingredients. If it’s too big, the heat won’t circulate properly, and if it’s too small, it will overflow.
- Fill it partway. To prevent overfilling, only fill it to about 1/2 or 3/4 full. This allows for proper heat circulation as well.
- Having a programmable slow cooker is great! You set the time and temperature and it automatically switches to the warm function when it’s done cooking.
- Liners are always a good idea when making crockpot soup recipes! They’re disposable, which makes cleanup a breeze.
- Cook times will usually depend on how much time you have in your day. You can either cook low and slow for about 8 hours or on high for 4-6 hours.

I like to brown it first for that extra layer of flavor. Then I scrape everything from the pan into the crockpot! It’s not required, however, so if you’re short on time, go ahead and skip it.
