Slow Cooker Sausage Cheese Dip is a warm cheesy dip made with Velveeta and cream cheese and loaded with crumbled sausage, tomatoes, and green chiles. Once the meat is cooked, it’s a dump-and-set recipe that you can make as mild or as spicy as you’d like. Serve it with your favorite dippers and this crockpot dip will have everyone asking for more!

Well, I love all dips. Cold dips, hot dips, dessert dips, you name it. But there is something comforting about a cheesy, meaty dip, especially during the cold months.
This crock pot sausage cheese dip is all of that. Plus a bit of spice!
With just 5 ingredients, including Velveeta cheese, Italian sausage, cream cheese, onion, and Rotel, it couldn’t be easier to whip up and it’s always a huge hit.
It is very similar to my Rotel dip with ground beef but the addition of mild sausage, cream cheese, and onions makes this tasty dip unique.

- Ground Italian Sausage – Italian sausage can be mild or spicy. This is another way of either keeping it mild or kicking up the spice a bit. Choose whichever you prefer.
- Diced Onion – Cooks down with the sausage. Not only does it give the sausage aromatic flavors, but the onion absorbs the meaty flavor as well.
- Cream Cheese – Adds a rich creamy texture and a tangy flavor. Cut it into cubes for easy melting.
- Velveeta – Also cut into cubes, Velveeta is known for its beautiful melting properties. It will make your dip smooth creamy and super cheesy.
- Rotel Tomatoes – This is a popular brand of canned tomatoes that includes green chiles. It comes in mild, hot, original, and even fire-roasted. I use the original but as always, you do you!
How to make Crock Pot Sausage Cheese Dip

- Step One: Brown sausage and onion in a large skillet over medium heat, breaking it up with a meat masher as it cooks. Once the meat is browned and cooked through, drain the excess grease.
- Step Two: Add the meat and onions to the slow cooker along with the cream cheese, Velveeta, and Rotel. Include the juices from the can.
- Step Three: Stir everything together, cover the slow cooker, and cook on low until fully melted. This should be about 2 hours, stirring occasionally.
- Step Four: Once the dip is melty and warm, turn the crockpot to the warm setting until you’re ready to serve it with crispy homemade tortilla chips and other dippers.
Every slow cooker runs differently. Times given are a general recommendation and should be tested in your own slow cooker and adjusted as needed.

- Tortilla chips of course!
- A raw veggie platter. Include hearty vegetables like carrots, celery, cucumber, broccoli, and cauliflower.
- Have assorted crackers available as well. Regular, whole wheat, gluten-free, salted, seasoned, you name it.
- Homemade pita or pumpernickel are my favorite breads for dipping. You could also include rye bread, crostini, or sliced baguette.
- You could also add some sausage balls without bisquick or Cheddar Bay sausage balls while you’re on a sausage kick!

- Warm up leftover dip and use it as a cheese sauce over nachos!
- Ground turkey could be used, but make sure to season it well so it’s not bland. A little taco seasoning will add good flavor.
- If you find it too thick, splash in a little milk to help thin it out.
- If you need a double batch for a larger crowd, it’s really easy to scale up, just make sure your slow cooker is large enough.
- Don’t train the Rotel, the juices are also what help to thin out the dip.
- Some people enjoy finishing their dip with a squirt of lime.
- For extra heat, use hot Rotel, extra green chiles, or diced jalapeno peppers. You can even use spicy sausage.

How to store leftovers
Crock pot sausage cheese dip can stay out for a couple of hours in the slow cooker on WARM, but after that, it’ll need to be kept in an airtight container in the fridge.

How to reheat it
Reheat it on the stove over low heat. You could also microwave little portions, just watch that you don’t overheat it or it’ll burn. You’ll likely need to add a splash of milk to thin it out.

Sausage cheese dip can be made with just 3 ingredients. Velveeta, Rotel, and ground sausage. However, for this recipe, I’m adding cream cheese for extra richness and tang and cooked onions for depth of flavor.
Add 1 can of corn or a can of rinsed and drained black beans. You could swap the diced onion for garlic powder and onion powder instead.
The key is to always keep it warm and stir occasionally. It will harden as it cools. The warm function on the slow cooker is a great idea for parties and potlucks.

Ingredients
- 16 ounce ground Italian sausage
- ½ cup onion diced
- 8 ounces cream cheese cubed
- 16 ounces Velveeta cubed
- 20 ounces RoTel
Instructions
- In a large skillet over medium heat, add the sausage and diced onion. Brown the meat and drain off any grease.
- To the basin of a 6 quart slow cooker, add the cooked sausage, cubed cream cheese, cubed Velveeta, and both cans of RoTel (do not drain them).
- Stir then cover and cook on LOW until fully melted, approximately 2 hours, stirring occasionally.
- Once melted, turn slow cooker to WARM for serving.
- Serve with tortilla chips.
