Red Velvet Cream Cheese Swirl Cookies

I'm not one of those bloggers that are on top of things and make recipes ahead of time for holidays. Well, I do, I just don't blog them until after the holidays. I made these beauties for Valentine's Day, though they'd be great for any occasion. Or just because.

I haven't used a cake mix in awhile and these cookies reminded me how convenient (& good) they can be. There's still time to make them for Valentine's Day!

Makes: 24 cookies

Ingredients
1 box Red Velvet cake mix (I used Duncan Hines)
2 eggs
2 tablespoons butter, softened
2 tablespoons milk
4 oz. cream cheese, softened & cubed

Directions
Preheat the oven to 350 degrees.

Line two baking sheets with wax paper, spray with non-stick baking spray, or use silicone liners. Set aside.

In a large bowl, combine the cake mix, eggs, butter and milk. Stir with a spoon. The batter will be VERY thick.

Drop the cubed cream cheese into the batter and gently fold in. Do not over mix.

Drop the batter by tablespoon onto the baking sheets, 2 inches apart. I used my cookie scoop. Love that thing.

Bake for 10 minutes or until the cookies are set.

Cool for a few minutes on the baking sheets then move to a wire rack to cool completely.
