My mom has been making these cheesecake filled cupcakes for years. They’re very simple because you use a cake mix (whichever flavor you like), but they have the surprise inside which is the chocolate chip cheesecake filling.

It’s my last week of maternity leave. I can hardly believe 12 weeks went by so quickly. Being home with the girls has been pretty amazing. Not only did I get to spend time with newbie, Rosie, but I had so much fun being home with Julia.

Rosie’s newborn sleeping habits left lots of time for Julia and me to do crafts and tons of baking.

Over the weekend, we went to the zoo but it started raining and cut our trip short.

On the way home, we stopped at Meijer and found the new Pillsbury Filled Pastry Bags. They’re pastry bags pre-filled with frosting that include a star tip. We picked up the Chocolate Fudge flavor and headed home to bake.

While newborns do sleep a lot, we’ve still had to cut a few projects short due to time constraints (i.e. Rosie wakes up whenever she wants to).

These pre-filled pastry bags are an awesome time saver both for Rosie’s unpredictableness and Julia’s 3-year old attention span.

There have been many times that we’ve made cupcakes together and I just end up spreading the frosting on with a knife because getting out a pastry bag, finding the right tip, filling it, then dealing with cleanup is too much when I have my favorite helper.

These bags solve all those problems.

Also for attention span and time constraint reasons, I’ve been making more and more semi-homemade recipes.

I’ve made these cupcakes with both yellow and chocolate cake but opted for yellow this time since we had picked up the Chocolate Fudge frosting. The cheesecake filled center is hard to see in the picture (it’s much more obvious in the chocolate cupcake version), but you’ll definitely taste it.

They’d also be delicious with a red velvet cake mix and the Filled Pastry Bags also come in Cream Cheese flavor – that would be a great combo.

Julia was thrilled that I let her pipe the frosting onto her own cupcake. I must say, she did a pretty good job.

Cheesecake Filled Cupcakes

Servings: 24 cupcakes
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Cheesecake Filled Cupcakes are super simple starting with a cake mix but filled with chocolate chip cheesecake mixture in the centers!

Ingredients
 

For the cupcakes

  • 15.25 ounce yellow cake mix made per the box instructions (any flavor works)

For the Cream Cheese Filling

  • 8 ounces cream cheese softened to room temp
  • cup granulated white sugar
  • 1 large egg
  • 1 dash salt
  • cup mini chocolate chips
  • Pillsbury Chocolate Fudge Filled Pastry Bag for frosting

Instructions

  • Preheat your oven to 350 degrees and line two cupcake pans with liners. Set aside.
    15.25 ounce yellow cake mix
  • Prepare your cake mix per the instructions on the box.
    8 ounces cream cheese
  • In another medium bowl, add the cream cheese, sugar, egg, salt, and mini chocolate chips and blend on medium speed until fully incorporated.
    ⅓ cup granulated white sugar, 1 large egg, 1 dash salt
  • Fill each cupcake well half full with cupcake batter.
    ⅓ cup mini chocolate chips
  • Drop in 1 teaspoon of cream cheese mixture to the center of each cupcake. Top with cake batter.
    Pillsbury Chocolate Fudge Filled Pastry Bag for frosting
  • Bake for 20 minutes or until a toothpick inserted into the center comes out clean.

Notes

Any flavor cake mix will work.
Store leftovers covered in the fridge for 3-4 days.
