If you need an easy crowd-pleaser, this slow cooker bacon and cheese dip delivers. Rich, creamy, and packed with crispy bacon, it’s a warm, gooey crockpot dip that stays ready to serve for hours.

Using a slow cooker makes this bacon and cheese dip so simple. Two kinds of melty cheese, some zest and some heat, and loads of crispy, salty bacon make this an irresistible crowd-pleaser for game day parties, holidays, potlucks, and movie nights with the family!

It comes together with minimal prep and can stay warm for hours. I like some heat in mine, but it’s customizable, so make yours mild if you like.

  • Cheeses: Bring cream cheese out to room temperature to soften. Cut it into cubes. Grate Colby Jack cheese from a block. Using freshly grated cheese will melt much more smoothly.
  • Half and half: A blend of whole milk and heavy cream, this helps bring the melted cheeses together with extra creaminess.
  • Mustard and Worcestershire sauce: For a tangy and umami depth of flavor.
  • Minced onion and salt: Simple yet effective!
  • Tabasco sauce: You can use your favorite hot sauce.
  • Cooked bacon: Cooked and crumbled however you prefer, but I love to cook bacon in the oven for less mess. You’ll need some for the dip and some for garnish.

How to make Bacon and Cheese Dip

  1. Step One: Add everything (except the bacon) into a small slow cooker.

  1. Step Two: Cover and cook on LOW for 1 hour. Stir occasionally until the cheese is fully melted.
  2. Step Three: At the end of the hour, once the cheese is smooth, remove the lid and sprinkle and stir in most of the bacon crumbles.

  1. Step Four: Sprinkle the remaining bacon bits on top and then turn on the warm function until you’re ready to serve!

Every slow cooker runs differently. Times given are a general recommendation and should be tested in your own slow cooker and adjusted as needed.

How to serve it

The options are endless when it comes to deciding what to use to scoop up this bacon and cheese dip. Warm dips always go great with soft pretzels, sourdough bread rounds, or even hunks of crusty bread.

I also picked up some of the Kroger brand pub style pretzels and highly recommend them.

You can also use tortilla chips, raw veggies, or sturdy crackers.

  • Using a small crockpot (2-3 quarts), this dip is enough to serve 8-16 people. You can also use a larger slow cooker, especially if you want to double the recipe.
  • Cook the bacon separately until crisp. If not, as it continues to cook, it’ll release extra grease into the dip.
  • I highly recommend grating your own cheese to prevent any lumps or clumps that can come from the pre-shredded cheeses.
  • If you notice your dip is too thick for your liking (it will also thicken as it cools), add a splash more of half and half.
  • Adjust the spice level. Completely omit the hot sauce if you prefer a mild slow cooker bacon and cheese dip. Or, make it hotter by adding diced jalapeno in there!
  • Can be kept warm for up to 3 hours. Stir occasionally.

How to store leftovers

Keep leftover bacon cheese dip in an airtight container for up to 4 days in the fridge.

Reheating Instructions

You can reheat it on low heat on the stove, stirring occasionally and adjusting the consistency with a little bit of half and half, if needed. 30-second intervals in the microwave is also a quick and easy way, or right back in the crockpot on the warm function.

Slow Cooker Bacon and Cheese Dip Recipe

This bacon and cheese dip is rich, creamy, and loaded with crispy bacon, all made easy in the slow cooker. It’s a warm, gooey crowd-pleasing crockpot dip that stays perfectly scoopable for parties, game day, and entertaining.

Ingredients
 

  • 16 ounces cream cheese at room temperature, cubed
  • 16 ounces colby jack cheese shredded
  • 1 cup half & half
  • 2 Tablespoons mustard
  • 1 Tablespoon minced onion
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon kosher salt
  • ¼ teaspoon Tabasco sauce or your favorite hot pepper sauce
  • 12 slices bacon cooked & crumbled, divided

Instructions

  • To a small slow cooker, add the cubed cream cheese, colby jack cheese, half & half, mustard, onion, Worcestershire sauce, salt, and Tabasco sauce.
    16 ounces cream cheese, 16 ounces colby jack cheese, 1 cup half & half, 2 Tablespoons mustard, 1 Tablespoon minced onion, 2 teaspoons Worcestershire sauce, ½ teaspoon kosher salt, ¼ teaspoon Tabasco sauce
  • Stir then cover and cook on LOW for 1 hour, stirring occasionally, or until fully melted.
  • Sprinkle most of the crumbled bacon over the top and stir in, sprinkle the remaining bacon over the top to serve.

  • Turn the slow cooker to WARM for serving.

Notes

  • Serve with soft pretzels, sourdough bread rounds, and/or vegetable dippers.
  • Dip makes approximately 1 quart. Depending on serving size, it should serve 8-16. 
  • Use a mini slow cooker (2-3 quart) for best results but a larger slow cooker can be used, if needed.
