Serve this cocktail on your deck in the summer after a dinner of Baked Chicken Fajitas and Skinny Pineapple Coconut Cake for dessert.

I had a baby, guys! Baby Girl #2, Rosie, joined us almost two weeks ago. She’s pretty amazing and I’ll have an official introduction post soon, but let’s talk about parenting a three year old and an newborn for a minute.

Motherhood is not for the faint of heart. Maternity leave is going a little differently this time around and most nights, I’m ready for a drink.

SKINNY PINEAPPLE COCONUT COCKTAIL INGREDIENTS

  • Coconut Pineapple Sparkling Ice – You can pick this up at nearly any grocery store or order it on Amazon.
  • White Rum – Bacardi, Captain Morgan…whatever you like
  • Triple Sec – Triple Sec is an orange-flavored liqueur that can be alcoholic or non-alcoholic. It’s cheap and adds flavor.
  • Ice – Of course.
  • Pineapple Slices – For garnish.

But I’m also thirsty and I found the perfect drink for the summer.

I found the perfect mixer – Sparkling Ice fruit flavored waters. They make beautiful, skinny cocktail mixers and even better, I can order them right on Amazon from the comfort of my couch/rocking chair, because I am not brave enough to take both girls out in public yet.

Can I say I’ve been looking forward to a cocktail for oh, about nine months, without sounding like a lush? I hope so. Because I have been.

This skinny cocktail is super simple – light and fizzy with Coconut Pineapple Sparking Ice, your favorite white rum, and a dash of triple sec. Easy peasy.

If you order the Sparkling Ice variety pack from Amazon, you’ll get to try flavors like Black Raspberry, Kiwi Strawberry, Orange Mango, and Cherry Limeade. I have visions of summer slushies – with or without alcohol. There are 15 flavors to try and they all have zero calories.

WHAT IS A SKINNY COCKTAIL

A skinny cocktail should have low calories. When I ran this pineapple coconut cocktail through MyFitnessPal, it came out at 109 calories and 6 carbs using Bacardi Silver. That will vary depending on which ingredients you use.

IS RUM A LOW CALORIE DRINK

Rum is not one of the lower calorie alcohols. But if you use Bacardi Silver, there are only about 19 calories per ounce, making this pretty reasonable.

CAN I DRINK RUM ON KETO

Most clear liquors have zero carbs and sugars on their own, but you have to be careful what you mix them with. Sparkling Ice also has zero carbs but it does contain sucralose.

Ingredients
 

  • ½ cup Coconut Pineapple Sparkling Ice
  • 2 jiggers white rum 3 oz
  • splash Triple Sec
  • ice - crushed ice would be even better
  • fresh pineapple optional for garnish

Instructions
 

  • Pour the Coconut Pineapple Sparkling Ice over ice cubes.
  • Add the white rum.
  • Pour in a splash of Triple Sec.
  • Stir to combine & enjoy!

    This sounds awesome! Just a question… if the sparkling ice contains sucralose, pineapple contains sugar & triple sec contains a lot of sugar…then how does the drink contain 0g sugar & 0g carbs? I was hoping to adjust this recipe to drink while following low carb/sugar eating plan. Any suggestions?

      I’m in the process of adding nutrition facts to each recipe (but it’s a slow process!). I just ran this through and it wasn’t getting a match so I tried MyFitnessPal and came up with 6 carbs & 5g of sugar (using Dekuyper Triple Sec & Captain Morgan rum). Hope this helps!

      Thank you so much for taking the time to answer… and so quickly!!
      I found some alternatives (I haven’t tried any yet) that have lower grams of sugar, so therefore fewer grams of carbs. 2 options, one alcoholic: Grand Marnier (or Gran Gala), or non-alcoholic… use liquid stevia (or liquid monkfruit) with orange extract for the taste but no additional alcohol. [Stevia can also be purchased with orange oil extract. ]

    I have made a drink similar to this for years since this product came out. My favorite rum to add is a coconut rum for the flavor, and I usually just add that with a squeeze of lime and ice, a little cut in the calories if that is your goal. I was glad to see this drink suggested over the high sugary drinks I see, and you are right, it is a great warmer weather drink.Thanks for the triple sec suggestion, too.
