Vegetable Tian is a delicious vegetarian dish made with zucchini, squash, tomatoes, and red skin potatoes, baked together and sprinkled with cheese. This colorful vegetable recipe makes a beautiful side dish or a main vegetarian meal.

WHAT IS A TIAN IN COOKING?
Do you know what a tian is? Basically, it is a layered dish of thinly sliced vegetables with flavors that should compliment each layer and baked with cheese.
In this case it is vegetables, but it can be layered dessert or meat.
This is a great way to eat your veggies. Typically I don’t even like cooked tomatoes but I’ll take potatoes, zucchini and squash just about any way you’ll give them to me. The flavors from the onion and garlic melded really well. This is definitely a new favorite way for me to make roasted vegetables.
INGREDIENTS
To make this vegetable tian, you’ll need the below list of ingredients. Scroll all the way down for the full recipe card with instructions.
- YELLOW ONION – yellow onion is mild and not as strong as a white onion.
- GARLIC – I like to buy peeled garlic, it is a great time saver. You can also use minced garlic packed in oil if that’s what you have on hand.
- POTATOES – I used a rose potato in this dish. Yellow or red will work well.
- ZUCCHINI
- YELLOW SQUASH
- TOMATOES – Roma tomatoes
- SALT & PEPPER
- CHEESE – an Italian cheese blend of shredded parmesan, asiago, and romano

Pie Dish – You’ll need a shallow pie dish. Glass or ceramic will work.
Large Skillet – I’ve had this one for years and still recommend it.
Kitchen Knife – You’ll need to slice the vegetables really thin so a good knife is helpful. You can also use a mandoline.

Vegetable Tian
Ingredients
- 2 Tablespoons olive oil
- ½ large yellow onion
- 1 Tablespoon minced garlic
- 1 large rose potato or red or yellow
- 1 large zucchini
- 1 large yellow squash
- 2 medium roma tomatoes
- salt & pepper to taste
- ½ cup shredded parmesan, asiago & romano cheese blend
Instructions
- Preheat the oven to 375 degrees and lightly coat a shallow pie dish with olive oil. Set aside.
- Dice one half of the onion.
- In a large skillet, over medium heat, add 1 Tablespoon of olive oil. Once hot, add in the diced onion. Saute until the onions are translucent, about 8 minutes.2 Tablespoons olive oil, ½ large yellow onion
- Once the onions are soft and translucent, add in the minced garlic and saute another minute.1 Tablespoon minced garlic
- Remove from heat and spread into the greased pie dish.
- While the onions are sauteing, thinly slice the vegetables to approximately 1/8" thick.1 large rose potato, 1 large zucchini, 1 large yellow squash, 2 medium roma tomatoes
- Start a spiral in the pie dish, making a pretty, single-layer pattern with the veggies on top of the garlic/onion mixture, alternating until the dish is full.
- Drizzle with 1 Tablespoon of olive oil and season with salt & pepper.salt & pepper
- Cover the dish with tin foil and bake for 35 minutes.
- After 35 minutes, carefully uncover the veggies and make sure the potatoes are fork tender.
- Sprinkle the vegetables with the cheese blend and bake another 25-30 minutes until the cheese is melted and the vegetables start to brown.½ cup shredded parmesan, asiago & romano cheese blend
