There are so many different ways to cook chicken and a ton of ways to make dinner in 30 minutes or less. Slow cooker honey teriyaki chicken is super simple.
And for classic dinners, you can always make lemon chicken piccata or air fryer buffalo chicken quesadillas.
However, you can’t get much easier than this cheesy chicken and potatoes. And making it all in one skillet is even easier with less cleanup! Plus, this simple recipe gives you plenty of room to change it up and use your favorite spices.
Parmesan and chicken just go together. This combination works in garlic parmesan chicken pasta and it works with potatoes, too!

Jump- Olive Oil – Use extra virgin olive oil or avocado oil to give the chicken pieces a nice golden sear.
- Chicken – Trim any excess fat and cut up chicken breasts or tenderloins into bite-sized pieces.
- Potatoes – Slice some baby potatoes in half. If you’re using larger potatoes, you’ll want to quarter them. As long as they’re bite-size as well.
- Paprika – This gives the chicken and potatoes a smoky flavor and a darker color as well.
- Poultry Seasoning – Most blends are made of sage, thyme, nutmeg, marjoram, and onion powder. If you don’t have any poultry seasoning, try and make your own!
- Black pepper – A bit of extra seasoning! You’ll notice we’re not using its partner in crime and that’s because the wing sauce and butter contain enough salt.
- Butter – Use salted butter so that it enhances all the other flavors.
- Garlic – Fresh garlic will have a stronger aroma and better flavor.
- Parmesan Wing Sauce – This mixture coats the chicken and potatoes in a bold flavor that wakes up your taste buds. Buffalo Wild Wings is a common brand but most markets have a store brand version. It’s so good!
- Mozzarella Cheese – This is what makes this dish so cheesy! Melted on top at the end just gives it the perfect comfort dish finish.

How to make Garlic Parmesan Chicken and Potatoes

Jump- Step One: Place the cut chicken into a large bowl and add one tablespoon of olive oil. To another large bowl, add the cut potatoes and one tablespoon of olive oil. Finally, in a small bowl, mix the paprika, poultry seasoning, and pepper.
- Step Two: Sprinkle half the seasoning evenly over the chicken and half over the potatoes and toss each one to make sure everything is evenly coated.

- Step Three: Pour the seasoned potatoes onto the baking sheet and roast in the preheated 400°F oven for 20 minutes. For extra crispiness, place the potatoes flesh-side down onto the tray before placing them in the oven.

- Step Four: In the meantime, while the potatoes are cooking, cook the chicken in a large skillet over medium-high heat for 7-10 minutes or until browned and fully cooked. Add the butter and garlic and stir to combine.

- Step Five: Toss in the roasted potatoes, toss to combine, then turn off the heat. Pour in the garlic parmesan sauce and toss to combine. Sprinkle cheese evenly over the chicken and potatoes and cover with a lid to melt, approximately 5 minutes. Enjoy!


Serving Suggestions
This dish might sound basic, but it is bursting with flavor! The chicken and potatoes just need a few sides to make it a complete meal. Add some veggies like cheesy broccoli casserole, roasted green beans, or oven roasted carrots.
And if you want more bread, make 3-ingredient biscuits. They are so easy to make and taste delicious with some butter.
- Any potatoes can be used in approximately 1″ cubes. Red potatoes, Yukon Gold potatoes, and fingerling potatoes have a more delicate edible skin. If using Russet potatoes, you may want to peel them first. It’s up to you.
- Use your favorite cheese – shaved parmesan will work well, cheddar cheese, Monterey Jack, Pepper jack cheese, Colby, or even a Mexican blend would be great.
- Shred your own mozzarella from a block for a better melt. Preshredded packaged stuff won’t melt as easily.
- To add a bit of heat, sprinkle some red pepper flakes on the potatoes.

Can I use the air fryer instead of the oven?
You can air fry the potatoes instead of oven-roasting them – 400° for 20 minutes. Pause halfway to give the air fryer basket a shake.
Is this a sheet pan recipe?
No! While I do love sheet pan recipes that make it easy to cook everything at once, this one is a skillet meal. We do roast the potatoes separately, but everything else is done in a skillet and the potatoes are combined at the end.
You can even serve it right from the skillet which is great!
What can I do with leftovers?

- 1 cup shredded mozzarella
Instructions
- Preheat the oven to 400°F and set out a baking sheet.

Really enjoyed this! Was pretty easy and delicious. I used Lawry’s seasoning salt which I wasn’t sure if that’s poultry seasoning or not? But it worked really well. The meal was very flavorful, a little spicy, and a good texture. My one year old isn’t crazy about potatoes but she loved the chicken!

So tasty! On the same pan as the potatoes, I roasted cherry tomatoes in olive oil, balsamic vinegar and basil. I let them both bake for an extra 5-10 min and added in the dish. I mixed poultry seasoning with creole seasoning to give it a little kick. Our new favorite meal
