Buffalo Chicken Pinwheels are a quick, crowd pleasing appetizer and a great way to give new life to leftover chicken. With only seven simple ingredients and no cooking involved, you’ll make these rollups over & over!

Buffalo Chicken Roll Ups

I enjoy a good buffalo chicken recipe. There is something about the spicy sauce and the cool blue cheese or ranch that I just love. In fact, these buffalo pinwheels are similar to my buffalo chicken dip.

Both are delicious; but these pinwheels are just more portable than the dip!

What are buffalo chicken pinwheels?

Pinwheels are a quick appetizer that is made up of flour tortillas filled with a cream cheese mixture. In this recipe, I use buffalo chicken ingredients to make up the filling. They’re often also called rollups.

  • Mixing Bowl – I like the grippy bottom so it doesn’t slide around the counter.
  • Spatulas – I use these silicone spatulas for everything!
  • Knife – A serrated knife makes for easily slicing the rolled tortillas.
  • Fancy Toothpicks – If you’re serving these at a party or just want to feel fancy, there are a ton of appetizer toothpicks to choose from.

Below is a list of the ingredients you’ll need to gather to make this recipe, why you need them, and possible substitutions. Scroll all the way down for the full recipe card with measurements.

  • CREAM CHEESE – I use full fat cream cheese; reduced will work as well, just don’t use non-fat. Start with room temperature (on the counter for at least an hour) to make your life easier.
  • CHICKEN BREASTS – You can quickly make shredded chicken in the IP or use a rotisserie chicken.
  • CHEDDAR CHEESE – I highly recommend shredding your own cheese. I know pre-shredded is convenient, but they add anti-caking agents and it just doesn’t melt the same.
  • BUFFALO WING SAUCE – I like Frank’s Red Hot Wing Sauce because it’s a little more mild, but use your favorite or make homemade buffalo sauce.
  • BLUE CHEESE – I added crumbled blue cheese to the filling of these pinwheels. It adds a nice texture and extra bit of flavor. If you are not a blue cheese fan, you can substitute crumbled feta or omit all together. 
  • CHIVES – Diced chives for flavor. If you’re not a fan, you can skip them.
  • TORTILLAS – Use your favorite brand of burrito size tortillas or larger for this recipe. The bigger the tortilla, the less roll ups you have to make. I used the largest tortillas I could find and this recipe filled 3 tortillas. If you use smaller tortillas, you will end up with more roll ups.

  1. STEP ONE – MAKE THE FILLING: In your large mixing bowl combine all of the ingredients, except the tortillas. Use a spatula to make sure everything is evenly incorporated. I like to add the blue cheese and the chives last so they don’t get as crumbly. 
  2. STEP TWO – FILL THE TORTILLAS: Scoop the buffalo chicken filling onto your tortilla. You will want to evenly divide the mixture among your tortillas. Using your spatula, evenly spread the mixture all over the tortilla, making sure to cover as much as possible. 
  3. STEP THREE – ROLL UP THE TORTILLA: Starting from any edge, roll the tortilla downwards into itself and the filling, pressing it as tightly together as you can. The tighter you are able to roll the tortilla, the better pinwheel shape will turn out. 

    Continue to roll up all the filled tortillas until they are all tightly sealed. Place them in a Ziplock bag and stick them in the fridge for 30 minutes to an hour to firm up. 
  4. STEP FOUR – CUT THEM: Using a sharp knife, cut the tortillas into slices about an inch thick. Repeat the process until you have cut all of the filled tortillas. Garnish with additional blue cheese and chives and enjoy!

What to serve with them

Put out some dipping sauces like ranch dressing, blue cheese dressing, or additional hot sauce.

They go great with 10 minute cucumber bites, baked green bean friespizza roll ups, or garlic herb dip.

How to store leftovers

If you have any leftover buffalo chicken pinwheels you will want to put them in an airtight container such as a plastic bag or a Tupperware. Keep them in the fridge to ensure freshness. 

Can I prep them the day before?

You can, but your tortillas may end up getting soggy. I suggest making the filling the day before and filling, rolling and cutting the tortillas the day-of. 

How long do they last?

These pinwheels will last 4 days, if stored properly in an airtight container in the fridge.

Ingredients
 

  • 8 oz cream cheese at room temperature
  • 1 cup cooked chicken shredded
  • ½ cup cheddar cheese shredded
  • cup Buffalo sauce
  • ¼ cup crumbled blue cheese
  • 2 tablespoons chives
  • 3 burrito sized tortillas

Instructions

  • In a large mixing bowl, mix together the cream cheese, chicken, shredded cheese, and buffalo sauce. Fold in the crumbled blue cheese and chives.
  • Spread the buffalo chicken mixture evenly onto the tortilla, making sure to cover as much as possible.
  • Repeat for remaining tortillas.
  • Starting from one edge, roll the tortilla into itself, making sure to roll as tightly as possible. Repeat for all tortillas.
  • Cover and place in the refrigerator for 30 minutes to an hour to firm up.
  • Slice into 1 inch circles.
  • Top with additional blue cheese and chives and enjoy!

Notes

Store covered in the fridge for up to 4 days.
Recipe should make approximately 24 slices depending on how large your tortillas are and how full you fill them.
