What’s the difference between a fudgy brownie and a cakey brownie?
Fudgy brownies will have more butter (or oil) and sugar than flour. Cakey brownies will contain more flour, baking powder, and require the eggs and sugar to be beaten.
What pan works best for brownies?
It really depends on the recipe. I’ve recently moved to metal pans and prefer them over glass.
The most common size pan for brownies is the 8×8 pan. This allows for even baking and a good thickness. You can also use a 9×9 pan; however, your brownies will be a bit thinner.
How do I know when my brownies are fully baked?
Most often, they’ll look a bit underdone, and that’s ok, especially if they’re extra fudgy! The last thing you want to do is overbake them. The best way to know is to insert a toothpick into the center. If it comes out mostly clean, and the edges of the brownies are set, they’re ready.
Can I freeze baked brownies?
Absolutely! That’s why I always say make a double batch if you can. Once they’re completely cooled, you can stack them in a freezer bag, separated by parchment paper, and freeze them for up to 2 months.
